Tasting notes:
Appearance: White, bright, crystalline, clear, with silver and grey hues. Extraordinary body from the barrels used in its finishing.
Nose: The primary notes are balanced notes of toasted wood. Secondarily, we receive notes of caramel and vanilla. It is also possible to perceive notes of butter and cooked agave. The slightly citrusy fruity notes stand out, banana and dried fruits are perceived at the end of the taste. The raw agave, although not its main characteristic, is perceptible at the bottom of the glass.
Palate: Voluptuous but very smooth. Very sweet in its flavour, its sweetness is persistent and rounded by the smoothness of the Tequila. You can also perceive flavours of caramel, honey and vanilla. Notes of cooked agave remain throughout the stay in the mouth. A very smooth Tequila, it can stay longer in the mouth without being burning. The taste also allows you to receive middle notes of wood typical of Porto wood.
Description.
- Agave cultivation. We use only Tequilana Weber Blue Agave, grown in the most prolific fields of our region, in accordance with our regulatory standards. Only family-owned agaves were selected by our expert jimadores; the selected agaves were carefully cared for and monitored throughout their growth; they are fully mature, in the best physical and chemical conditions for the Tequila they are intended for. They are harvested when they reach the best ripeness conditions. This causes a higher concentration of sugars and agave essence in their flavor.
- Cooking. Cooking is carried out slowly to ensure uniformity in the essence of the agave, its honey is separated and processed separately. Cooking is carried out in traditional masonry ovens heated by steam for 40 hours.
- Grinding. Traditional process of 4 mills with three masses. Grinding is done only once, a single run for cooked agave. A bath of hot water is falling on the agave to dissolve and extract all the character of it.
- Fermentation. Fermentation is 100% natural with yeast selected from the concentrated juices themselves. The naturalness of the process makes it very slow and harmonious, lasting up to 72 hours. It uses a specially selected yeast strain, cultivated and developed in our quality control laboratory.
- Distillation. A slow and rhythmic double distillation is carried out, which is where the characteristic essences of Tequila are captured. The spirits called head and tails are completely separated from the process. The distillation process is a traditional process where only copper stills are used. Our slow process allows us to recover the sensory notes developed in the fermentation by our selected strains, the result is a product with a great profile and extraordinary cleanliness in its organoleptic notes.
- Maturation. Once the double distillation has been carried out, the Tequila obtained has been given a finish for 4 months in Porto barrels imported from Portugal that were previously used for the aging of this generous wine. The profile obtained with this aging is intense, round and smooth; characteristic of Porto wines.
- Artisanal Engineering. After completing its maturation period, the Tequila is subjected to a filtration process called “diamond” that allows us to selectively remove the color of the product and maintain the sensory characteristics of the aged Tequila produced in the maturation stage. The transparency and brilliance of a 100% Agave White Tequila are present at the end of this filtration process.
